Lula’s Cacao Oat Energy Blobs

Ahhh, this is just a bit of variation on the traditional flapjack, it’s yummy and the richness of the Organic Cacao means that small portions can be the way to go – a long lasting snack to have in the pantry.

Method

Grease a small baking tray

Melt the flora – 1/5 of the tub, and golden syrup (enough to fully immerse the flora together) .

Envelope the mixture by then adding the organic cacao – enough to cover the flora-syrup mixture which should have melted after three minutes on the hob at a low heat.

Yummy 😋 and smelling divine.

Briskly add the oats, 400g to the mix, stirring thoroughly and off the heat.

Place in the baking tray and into the oven at 180’ for fifteen minutes. Allow to cool before rolling into rough, rustic blobs.

Rich, filling and a ton of slow release energy. Tasty too!! All this makes for a fantastic snack to have about whilst staying at home.

A Beautiful Okra Side Dish (or Vegan main)

The delicious Indian 🇮🇳 delicacy Okra, also known as Ladies Fingers, is an absolute joy to cook with veg and seasoning in a stir fry pan. Something new, because, tbh broccoli can get a bit boring sometimes.

Here I will show you how ten to twelve minutes of cooking with Okra leads to a happy, healthy dinner. Hold on tight! are u ready?!

Ingredients

12x ladies fingers/Okra

25 Santini tomatoes 🍅 ( cherry tomato is just as good)

1/2 a red onion 🧅

2x garlic 🧄 cloves

Generous glug of Olive Oil.

Smattering of Sea Salt 🧂

Method

1) Top & tail the Okra.

2) chop up the onion and garlic into small pieces.

3) halve the Santini tomatoes.

4) heat the Olive oil in the frying pan for one minute.

5) add the Okra, garlic and onion to the hot oil. Cook for ten minutes.

6) add the tomatoes and a pinch or two of sea salt to the mix. Heat for five more minutes.

Enjoy as a side or a main. I have three vegan sausages and a couple of cheeky cheese and onion potatocakes. The Okra mix went beautifully.

Lula’s two-ingredient Banana Bread 🍌

I know, I know. I’m kinda late to the party Re the covid / banana loaf thang.

But, it’s just the ticket 🎫 if, you’re like me – sweet tooth, but craving food that nourishes. This is your man (!)

Ingredients

4x overripe bananas

350g ground almonds

Method

1) turn on the oven to 180.

2) grease a baking tin with olive oil.

3) skin and chop the bananas.

4) carefully place into magimix/food processor

5) add the ground almond to the bananas.

6) switch food processor on and blend for two and a half minutes.

7) spoon into the greased baking tin.

8) place in oven for twenty mins.

9) leave to stand for twenty mins.

10) chop into rough, rustic squares.

11) enjoy a little piece of bliss!

BBC Good Food 🥘 Risotto, a delish dish!

Ingredients

Beautiful Ingredients – lush and fresh for the taking.

Method

1) chop up the Aubergine into small chunks.

2) add olive oil to the pan and heat the aubergine for ten minutes.

3) set to one side. Heat the onions 🧅 for five mins and then add to this the garlic and stalks from the parsley handful.

4) add two tsp of the turmeric and smoked paprika each, as well as the Arborio Risotto Rice to the mixture in the pan. Coat well.

5) add a 3/4 l of stock w one Knorr organic veg stock cube. Heat for twenty mins.

6) next add the cooked aubergine and chargrilled artichokes from a jar, including the oil. Add the 3/4 l of stock with the second final Knorr veg stock cube.

7) finally add the juice from three lemons 🍋 taking care to remove the pips.

8) garnish with parsley leaves 🌿

Nourishing New Potato Dish

Potatoes are absolutely yummy! They can be eaten in so many guises – chips/crisps/roasted/the list goes on……..

But let’s switch things up a bit with this recipe of mine –

Ingredients

12x new potatoes 🥔

2x garlic cloves

1/4 of a red onion 🧅

12x cherry tomatoes 🍅

7x sundried tomatoes 🍅

A glug of olive oil

A few sprigs of parsley 🌿

1. Chop new potatoes in half and boil for fifteen mins, until soft.

2. Chop up the garlic 🧄 and onion 🧅

3. Chop the sundried tomatoes 🍅 into thirds.

4. Add Olive Oil to saucepan. Heat for a min.

5. Add the chopped onion and garlic to the oil.

6. Heat for five mins, then add the rest of the ingredients ( omitting the parsley at this point)

7. Heat ingredients in pan for ten mins. Dish out. Place a sprig of parsley top of dish 🌿

I added a chicken burger 🍔 with aubergine pesto.

Nourish Me Pitta 🥙 Pockets

Is it me, or do carbs have the WORST rep EVER?!

Today we are using wholemeal pitta and filling them with a heavenly combo of vegetables. Get Ready for deliciousness!

Ingredients

1x jar Marinated Artichoke hearts 💞

1/2 jar Sundried tomatoes 🍅

15x Cherry tomatoes

Half a small Red onion 🧅

Handful of fresh Herbs 🌿- I like flat-leaf parsley

1x lemon 🍋

6x wholemeal pittabread

Method

Place the artichokes (and the marinade in the jar), sundried tomatoes, cherry tomatoes, onions, into a saucepan. On a low heat, warm and stir for 4 minutes.

Warm the Pitta in a toaster.

Add the lemon juice to the mixture.

Carefully, using a spoon, place the vegetable mixture into the pitta breads.

Eat immediately.

Choco- Avo scrumptious mousse 👌🏼

First we have talented plant based chef ‘Deliciously Ella’ to thank for this stunning recipe! I love her books, the instructions and ingredients are easy to source and create a ‘feel-good’ experience.

Let’s get started!!

Ingredients

– 2x Ripe Avocados 🥑

– 4x Very ripe bananas 🍌

– 12x Dates

– 4x tbsp Almond Butter 🧈

And the piece de resistance …. 5x Teaspoons of Organic Cacao. 🍫

This recipe is so simple it only takes ten mins top to make! Here we go :

Firstly stone and skin both avocados and pop them into a food processor.

Skin the bananas, chop the dates and add these ingredients as well as the rest to the Avo in the processor.

In two bursts of two minutes each, switch on the food processor. Make sure the mix is smooth.

Dish out into small glass dishes and garnish with a fruit 🍇 or herb 🌿 to your taste, I like mint leaves to add to the layers of taste of your nourishing dessert.

Place into fridge and chill for twenty mins.
