A Hearty Nourishing Dinner 🍲

The chosen few……..

Ingredients

2x Jacket Potatoes 🥔 chopped roughly into thick wedges

1x Red Onion chopped finely

5x Garlic 🧄 kernels cut into tiny pieces

6x round tomatoes 🍅

Chicken in BBQ glaze (ready prepared) from all good food supermarkets and great 👍🏻 for protein and energy.

A dusting of dried parsley 🌿

A few generous pinches of sea salt 🧂

Two generous glugs of olive oil.

Method

Place the chicken into a baking tin and add the potatoes, drenching in olive oil, sea salt & dried parsley. Heat potatoes and chicken on 220 for an hour.

Heat the second and final half of the Olive oil in a frying pan. Add the onion and garlic, & cook for five minutes until the heavenly ‘kitchenny’ smell starts to take effect.

At this point add chopped tomatoes ( cut into small wedges) to the onion & garlic. Heat until the juices flow and the tomatoes begin to sweat and stew.

Place the tomatoes frying pan mix to one side and turn off the heat on the hob.

After the chicken and rustic potato wedges have cooked, quickly heat up the tomatoes mix for another four minutes.

Plate up !!

Lula’s Cacao Oat Energy Blobs

Ahhh, this is just a bit of variation on the traditional flapjack, it’s yummy and the richness of the Organic Cacao means that small portions can be the way to go – a long lasting snack to have in the pantry.

Kitchen Heroes

Method

Grease a small baking tray

Melt the flora – 1/5 of the tub, and golden syrup (enough to fully immerse the flora together) .

Envelope the mixture by then adding the organic cacao – enough to cover the flora-syrup mixture which should have melted after three minutes on the hob at a low heat.

Yummy 😋 and smelling divine.

Briskly add the oats, 400g to the mix, stirring thoroughly and off the heat.

Place in the baking tray and into the oven at 180’ for fifteen minutes. Allow to cool before rolling into rough, rustic blobs.

Rich, filling and a ton of slow release energy. Tasty too!! All this makes for a fantastic snack to have about whilst staying at home.

A lockdown smorgasbord

I always find cooking just so therapeutic, and productive.

Here we have some tantalizing flavours for a supper that will make you feel a) full b) nourished c) happy!! Whatcha waiting for?!

Ingredients

Bag of new potatoes 🥔 cut in half.

6x garlic cloves. In small pieces.

Generous glug of olive oil

1x big bunch of curly leaf parsley 🌿

1x bag of green beans (top & tailed)

4x slices of smoked salmon

2x lemons 🍋 cut in half.

Method

1) place the new potatoes and parsley and garlic into the roasting tin.

2) add the Olive Oil.

3) cook for 40 mins on 220.

4) meanwhile boil the green beans.

5) After cooking take the ingredients and either spoon them out onto individual plates, or one big cooking dish.

6) i then added some smoked salmon ( taking advantage of the 3 for £10 offer in Marks) ( it freezes well)

7) plate up and enjoy!!!

Pure health! As my dad would say. Myself and Adz scoffed this! Definitely love this combo of ingredients!! Change from herbs to paprika on the new potatoes. I added a tiny bit of sea salt to the green beans.

Happily Eating……..Gnocchi!

So Gnocchi is a beautiful potatoey dumpling 🥟 kinda thang. The benefits? Super-tasty, super quick and easy peasy to cook. 👩🏻‍🍳

I don’t know about you, but pasta sometimes doesn’t agree with me, and anyway, it’s always nice and refreshing to switch things up a little! Here’s my recipe for a speedy, yet impressive Supper.

Ingredients

500g Gnocchi

12x King Prawns 🍤

Small jar tomato 🍅 pesto

350g jar marinated artichokes

Sprinkling of Parmesan – (optional)

Method

1) Take a large saucepan and fill it to halfway with boiling water.

2) Add the Gnocchi. Cook until the gnocchi rises to the top.

3) Using a colinder, get rid of the excess water down the sink.

4) Add the pesto, to the warm gnocchi and distribute evenly.

5) Add the Artichokes and then the prawns. Mix well with the pesto covered gnocchi.

6) Plate up, and eat whilst still warm.

Makes enough for four generous portions, ENJOY!!

This recipe is suitable for pescatarians (just leave out the grated cheese)
Cook 👩🏻‍🍳 for five mins or until all gnocchi is floating on the top.
Mix all the ingredients together…..
