A Hearty Nourishing Dinner ๐Ÿฒ

The chosen few……..

Ingredients

2x Jacket Potatoes ๐Ÿฅ” chopped roughly into thick wedges

1x Red Onion chopped finely

5x Garlic ๐Ÿง„ kernels cut into tiny pieces

6x round tomatoes ๐Ÿ…

Chicken in BBQ glaze (ready prepared) from all good food supermarkets and great ๐Ÿ‘๐Ÿป for protein and energy.

A dusting of dried parsley ๐ŸŒฟ

A few generous pinches of sea salt ๐Ÿง‚

Two generous glugs of olive oil.

Method

Place the chicken into a baking tin and add the potatoes, drenching in olive oil, sea salt & dried parsley. Heat potatoes and chicken on 220 for an hour.

Heat the second and final half of the Olive oil in a frying pan. Add the onion and garlic, & cook for five minutes until the heavenly โ€˜kitchennyโ€™ smell starts to take effect.

At this point add chopped tomatoes ( cut into small wedges) to the onion & garlic. Heat until the juices flow and the tomatoes begin to sweat and stew.

Place the tomatoes frying pan mix to one side and turn off the heat on the hob.

After the chicken and rustic potato wedges have cooked, quickly heat up the tomatoes mix for another four minutes.

Plate up !!

Lulaโ€™s Cacao Oat Energy Blobs

Ahhh, this is just a bit of variation on the traditional flapjack, itโ€™s yummy and the richness of the Organic Cacao means that small portions can be the way to go – a long lasting snack to have in the pantry.

Method

Grease a small baking tray

Melt the flora – 1/5 of the tub, and golden syrup (enough to fully immerse the flora together) .

Envelope the mixture by then adding the organic cacao – enough to cover the flora-syrup mixture which should have melted after three minutes on the hob at a low heat.

Yummy ๐Ÿ˜‹ and smelling divine.

Briskly add the oats, 400g to the mix, stirring thoroughly and off the heat.

Place in the baking tray and into the oven at 180โ€™ for fifteen minutes. Allow to cool before rolling into rough, rustic blobs.

Rich, filling and a ton of slow release energy. Tasty too!! All this makes for a fantastic snack to have about whilst staying at home.

A lockdown smorgasbord

I always find cooking just so therapeutic, and productive.

Here we have some tantalizing flavours for a supper that will make you feel a) full b) nourished c) happy!! Whatcha waiting for?!

Ingredients

Bag of new potatoes ๐Ÿฅ” cut in half.

6x garlic cloves. In small pieces.

Generous glug of olive oil

1x big bunch of curly leaf parsley ๐ŸŒฟ

1x bag of green beans (top & tailed)

4x slices of smoked salmon

2x lemons ๐Ÿ‹ cut in half.

Method

1) place the new potatoes and parsley and garlic into the roasting tin.

2) add the Olive Oil.

3) cook for 40 mins on 220.

4) meanwhile boil the green beans.

5) After cooking take the ingredients and either spoon them out onto individual plates, or one big cooking dish.

6) i then added some smoked salmon ( taking advantage of the 3 for ยฃ10 offer in Marks) ( it freezes well)

7) plate up and enjoy!!!

Pure health! As my dad would say. Myself and Adz scoffed this! Definitely love this combo of ingredients!! Change from herbs to paprika on the new potatoes. I added a tiny bit of sea salt to the green beans.

Happily Eating……..Gnocchi!

So Gnocchi is a beautiful potatoey dumpling ๐ŸฅŸ kinda thang. The benefits? Super-tasty, super quick and easy peasy to cook. ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ

I donโ€™t know about you, but pasta sometimes doesnโ€™t agree with me, and anyway, itโ€™s always nice and refreshing to switch things up a little! Hereโ€™s my recipe for a speedy, yet impressive Supper.

Ingredients

500g Gnocchi

12x King Prawns ๐Ÿค

Small jar tomato ๐Ÿ… pesto

350g jar marinated artichokes

Sprinkling of Parmesan – (optional)

Method

1) Take a large saucepan and fill it to halfway with boiling water.

2) Add the Gnocchi. Cook until the gnocchi rises to the top.

3) Using a colinder, get rid of the excess water down the sink.

4) Add the pesto, to the warm gnocchi and distribute evenly.

5) Add the Artichokes and then the prawns. Mix well with the pesto covered gnocchi.

6) Plate up, and eat whilst still warm.

Makes enough for four generous portions, ENJOY!!

This recipe is suitable for pescatarians (just leave out the grated cheese)
Cook ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ for five mins or until all gnocchi is floating on the top.
Mix all the ingredients together…..

BBC Good Food ๐Ÿฅ˜ Risotto, a delish dish!

Ingredients

Beautiful Ingredients – lush and fresh for the taking.

Method

1) chop up the Aubergine into small chunks.

2) add olive oil to the pan and heat the aubergine for ten minutes.

3) set to one side. Heat the onions ๐Ÿง… for five mins and then add to this the garlic and stalks from the parsley handful.

4) add two tsp of the turmeric and smoked paprika each, as well as the Arborio Risotto Rice to the mixture in the pan. Coat well.

5) add a 3/4 l of stock w one Knorr organic veg stock cube. Heat for twenty mins.

6) next add the cooked aubergine and chargrilled artichokes from a jar, including the oil. Add the 3/4 l of stock with the second final Knorr veg stock cube.

7) finally add the juice from three lemons ๐Ÿ‹ taking care to remove the pips.

8) garnish with parsley leaves ๐ŸŒฟ

Nourishing New Potato Dish

Potatoes are absolutely yummy! They can be eaten in so many guises – chips/crisps/roasted/the list goes on……..

But letโ€™s switch things up a bit with this recipe of mine –

Ingredients

12x new potatoes ๐Ÿฅ”

2x garlic cloves

1/4 of a red onion ๐Ÿง…

12x cherry tomatoes ๐Ÿ…

7x sundried tomatoes ๐Ÿ…

A glug of olive oil

A few sprigs of parsley ๐ŸŒฟ

1. Chop new potatoes in half and boil for fifteen mins, until soft.

2. Chop up the garlic ๐Ÿง„ and onion ๐Ÿง…

3. Chop the sundried tomatoes ๐Ÿ… into thirds.

4. Add Olive Oil to saucepan. Heat for a min.

5. Add the chopped onion and garlic to the oil.

6. Heat for five mins, then add the rest of the ingredients ( omitting the parsley at this point)

7. Heat ingredients in pan for ten mins. Dish out. Place a sprig of parsley top of dish ๐ŸŒฟ

Pasta A la Lula!

Pasta is just a real staple food. Itโ€™s a blank canvas, and I find it tastes best with simple, minimal flavours. This is so it ainโ€™t too heavy.

Follow my easy recipe for dinner time wins.

Ingredients

2x portions of Pasta.

Medium Jar Marinated artichokes

Juice of one lemon ๐Ÿ‹

9x sundried tomatoes

A generous dusting of Parmesan

Methodology

Boil pasta.

Drain.

Add entire jar of artichokes and the liquid.

Add juice of ๐Ÿ‹

Finely chop sundried tomatoes ๐Ÿ…

Add Parmesan

Nourish Me Pitta ๐Ÿฅ™ Pockets

Is it me, or do carbs have the WORST rep EVER?!

Today we are using wholemeal pitta and filling them with a heavenly combo of vegetables. Get Ready for deliciousness!

Ingredients

1x jar Marinated Artichoke hearts ๐Ÿ’ž

1/2 jar Sundried tomatoes ๐Ÿ…

15x Cherry tomatoes

Half a small Red onion ๐Ÿง…

Handful of fresh Herbs ๐ŸŒฟ- I like flat-leaf parsley

1x lemon ๐Ÿ‹

6x wholemeal pittabread

Method

Place the artichokes (and the marinade in the jar), sundried tomatoes, cherry tomatoes, onions, into a saucepan. On a low heat, warm and stir for 4 minutes.

Warm the Pitta in a toaster.

Add the lemon juice to the mixture.

Carefully, using a spoon, place the vegetable mixture into the pitta breads.

Eat immediately.
