Nourish Me Pitta 🥙 Pockets

Is it me, or do carbs have the WORST rep EVER?!

Today we are using wholemeal pitta and filling them with a heavenly combo of vegetables. Get Ready for deliciousness!

Ingredients

1x jar Marinated Artichoke hearts 💞

1/2 jar Sundried tomatoes 🍅

15x Cherry tomatoes

Half a small Red onion 🧅

Handful of fresh Herbs 🌿- I like flat-leaf parsley

1x lemon 🍋

6x wholemeal pittabread

Method

Place the artichokes (and the marinade in the jar), sundried tomatoes, cherry tomatoes, onions, into a saucepan. On a low heat, warm and stir for 4 minutes.

Warm the Pitta in a toaster.

Add the lemon juice to the mixture.

Carefully, using a spoon, place the vegetable mixture into the pitta breads.

Eat immediately.

A very Autumnal Organic Hot Chocolate 🍫 🥛

To me, as Summer tails off, I like to swap my usual icy drinks 🥤 with something very cosy and warming.

Everyone likes hot chocolate? Right?!

Here is my take on a lovely recipe that is literally the creme de la creme. Get ready for blissful drinks and cosy times.

Ingredients

– Organic Cacao Powder 3x teaspoons

– 1x mug full of Organic Semi Skimmed milk (or, if vegan, milk of your choice ie oat/almond etc)

– 6 sweetener drops (eg stevia/canderel)

Method

Place Milk 🥛 in saucepan

Add 6 tiny sweetner drops

Add the 3 tsp of Organic Cacao Powder to the milk mixture.

Heat for five minutes, low heat and stir to blend to a smooth liquid.

Taste test.

Add to a nice cosy mug of choice.

Happy Xmas!! K, joke joke.

Drink up. Feel happy.

Choco- Avo scrumptious mousse 👌🏼

First we have talented plant based chef ‘Deliciously Ella’ to thank for this stunning recipe! I love her books, the instructions and ingredients are easy to source and create a ‘feel-good’ experience.

Let’s get started!!

Ingredients

– 2x Ripe Avocados 🥑

– 4x Very ripe bananas 🍌

– 12x Dates

– 4x tbsp Almond Butter 🧈

And the piece de resistance …. 5x Teaspoons of Organic Cacao. 🍫

This recipe is so simple it only takes ten mins top to make! Here we go :

Firstly stone and skin both avocados and pop them into a food processor.

Skin the bananas, chop the dates and add these ingredients as well as the rest to the Avo in the processor.

In two bursts of two minutes each, switch on the food processor. Make sure the mix is smooth.

Dish out into small glass dishes and garnish with a fruit 🍇 or herb 🌿 to your taste, I like mint leaves to add to the layers of taste of your nourishing dessert.

Place into fridge and chill for twenty mins.

Cheeky Italian Bruschetta!

Q) what’s tasty, got all the flavour, simples to rustle up, and gives you two of your five a day?! ( um, clue in title) …….,,,

Ingredients

1x Ciabatta loaf, cut into four. 🥖

2x tbsp Pesto (flavour of your choice)

20x cherry tomatoes 🍅

1x 1/2 small cup of red onion 🧅

Generous glug of olive oil

Method.

Add olive oil to a medium frying pan, heat and place both the onions and tomatoes into the pan. On a high heat, cook these for five mins, stirring occasionally.

Next, Add the bread, doughy part facedown to the frying pan for two mins, allowing it to soak up the flavoursome olive oil, and flavours of onion and tomato.

After this, place the ciabatta on a big serving dish. Layer with the contents of the frying pan and at the end, add a cheeky topping of lush pesto on top of each piece of bread.

Serve immediately!

Lula’s easy peasy salt n vinegar nourishing almonds

Perhaps the simplest recipe I have ever made!!

Ingredients

Bag of Almonds

Generous glug of Sarsons Vinegar

Sprinkling of Salt 🧂

Method

Preheat oven to 200.

Get one Roasting tin

Sprinkle with generous amount equal measures of the salt and vinegar

Add the almonds to tin and use a spoon to mix and marinade with salt and vinegar mixture

Roast for just five minutes

Leave to cool for twenty minutes

Enjoy! The perfect snack.

Lula’s Pasta Bake

Spelt pasta 🍝 bubbling away
Beautiful Artichoke hearts
Nice bit of smoked ham
My cheat item- mascarpone aubergine sauce

Ingredients

140g artichoke hearts in jar.

190g mascarpone & aubergine sauce.

250g spelt pasta

125g smoked ham

Cook spelt pasta for 8 mins.

Meanwhile, using a sharp knife, cut up the smoked ham into bite size pieces.

Drain the Pasta and put it into a cooking dish.

Mix all of the ingredients together with the pasta.

Cook for 15 mins.

Serve with Romaine lettuce, balsamic vinegar.

Serves 4
