Lulas Syrupy Flapjack Chunks

Hands up who doesn’t like flapjack?! Thought so!

Here is a very simple recipe, but be warned – they are very moreish!

Ingredients

200g spread ( I used Flora light – it is suitable for baking)

500g Oats

250g golden syrup 
Method

Use a big saucepan on a low heat to melt the spread and mix with the golden syrup. This should take 2 minutes, make sure you constantly stirring.

Add the oats to the mix and coat with the syrup mixture.

Once this is done, add to a greased baking tray,and heat on 180 for half an hour.

Remove from Oven, leave to cool (if you can bear too!) And then share with loved ones. 

Lulas Roast Veg Couscous

I always make sure that I have a huge crate of this recipe (or Tabbouleh) in my fridge at all times – it’s pure nourishment. I add Feta, crumbled on top but for those who don’t fancy it, a large dollop of Tzatziki also works beautifully. 

Ingredients

rainbow of 3x peppers, chopped into bitesized slices.                                      1x leek.                                                                                                                              1x punnet of Cherry tomatoes, halved.                                                                  2x red onions, skinny chunks.                                                                                   5x garlic pieces, skinned.                                                                                          6x salad tomatoes, but into small chunks.         

Couscous 500g

Feta cheese 250g

Olive Oil, generous splash. 

Method

Preheat Oven 200. 

Chop up veg, as stated and pop into preheated roasting dish. Set timer for 40 mins.

In the meantime, place the couscous in a large bowl, and add enough boiling water to cover it at the top. 

Chop up Feta cheese, roughly, into small chunks.

When vegetables are roasted, add all ingredients to a large serving dish (check it fits in fridge!)

Plate up!
